Ražani cvet sa maslinovim uljem * Rye Pull Apart Bread with Olive Oil


Ovo je bogat i zdrav hleb koji se lako pravi i može dugo da stoji, a dok se peče, cela kuća miriše na ruzmarin.

This is a lavish and healthy bread, easy to make, and it will stay fresh for a long time. While it bakes, it fills the entire house with the scent of rosemary.


Sastojci:
Ingredients:

500 gr ražanog integralnog brašna
200 gr običnog belog brašna
10 gr suvog kvasca
oko 700 ml tople vode
kašičica žutog šećera
kašičica soli
maslinovo ulje
crni susam
beli susam
suvi, seckani ruzmarin

500 gr rye integral flour
200 gr plain white flour
10 gr dry yeast
approximately 700 ml warm water
a teaspoon of brown sugar
a teaspoon of salt
olive oil
black sesame seeds
white sesame seeds
dry, chopped rosemary


U veću posudu sipati 200 gr belog i 300 gr ražanog brašna, dodati šećer, so i suvi kvasac, izmešati pa sipati tople vode, konstantno mešajući. Zamesiti varjačom testo pa pokriti krpom i ostaviti da odstoji petnaestak minuta.

Mix in a larger bowl 200 gr white and 300 gr rye flour, add sugar, salt and dry yeast, mix and add warm water, mixing constantly. Once you make the dough with a spoon, cover it with a clean cloth and leave to rest for some fifteen minutes.


Kada testo naraste, premesiti na pobrašnjenoj dasci, dodajući još ražanog brašna, koliko je potrebno da testo bude kompaktno ali meko. Dodati u ruku malo maslinovog ulja i zamesiti.

Once the dough has risen, transfer it onto a board covered with rye flour, and use as much additional flour as it's needed to make a compact, but still soft dough. Add some olive oil and knead. 


Opet pokriti krpom i ostaviti petnaestak minuta da naraste.

Again, cover with a cloth and leave for fifteen minutes to rise.


Još jednom premesiti, rastanjiti i iseći testo na jednake kockice.

Knead once again, flatten the dough and cut into equal squares.


Uzeti jednu kocku, oblikovati rukama u lopticu, umočiti u maslinovo ulje, rukama rasporediti ulje po celoj loptici, pa je uvaljati u tanjir u kom su pomešani crni, beli susam i ruzmarin. Staviti lopticu u nauljenu okruglu tepsiju.

Take one square of dough, shape it with fingers into a ball, dip into olive oil, use fingers to cover the entire ball with the oil, then dip it into a mixture of white, black sesame and rosemary and roll it so as to cover it completely. Place the ball in a greased, round baking tray.



Ponoviti proces dok ne potrošimo svo testo.

Repeat the process until all the dough is used.



Još jednom pokriti testo krpom i ostaviti da odstoji. Uključiti rernu na 220 stepeni. Kada se zagreje, staviti pleh u rernu i peći 30 minuta, pa smanjiti na 200 i peći još 30 minuta, dok hleb lepo ne porumeni.

Once again, cover the dough with a cloth and let it rest. Turn the oven on at 220 degrees C. Once it's heated, place the tray in the oven and bake for 30 minutes, then reduce the heat to 200 and bake for another 30 minutes, until the bread gets golden brown.
