Gulaš od pečuraka sa sremušem * Mushroom and Wild Garlic Stew


Ovo je lagano, vegetarijansko jelo puno proteina. Može se praviti od svih vrsta jestivih pečuraka, što više, to bolje.

This is a light, vegetarian meal packed with protein. It can be made from any kind of edible mushrooms, the more, the better.


Sastojci:
Ingredients:
200 g tamnih šampinjona
150 g bukovača
kašičica sušenih mlevenih šitaka
veza sremuša
1 šargarepa
2 manja ili 1 veći krompir
pola praziluka (svetliji deo)
začini: celerova so, biber, tucana sudžuk paprika, majčina dušica, sušeni mleveni beli luk
kašičica brašna
200 g brown mushrooms
150 g oyster mushrooms
1 teaspoon ground dried shiitake
about 20 wild garlic leaves
1 carrot
2 small or 1 large potato
half a leek (the white bit)
spices: celery salt (dried ground celery with sea salt), pepper, coarsely ground chili, thyme, dried ground garlic
a teaspoon of plain flour




Oprati i očistiti svo povrće i oprati pečurke. Krompir i šargarepu iseći na sitnije komade i staviti u vodu. Pečurke iseckati na krupnije komade. Sremušu odseći stabljike i iseckati sitno, a zasebno iseći listove na tanke tračice. Sitno iseckati praziluk.

Wash and peel all the vegetables and wash the mushrooms. Finely dice the potatoes and carrots and put them in water. Chop the mushrooms. Cut off the wild garlic stems and chop them finely, and separately slice the leaves. Finely chop the leek.



Staviti šerpu na vatru, dodati malo ulja i kada se zagreje staviti praziluk i stabljike sremuša. Na kratko propržiti pa dodati sve pečurke.

Place a pot on the stove and add a bit of oil. Once it heats up, add the leek and wild garlic stems. Fry briefly. Add all of the mushrooms.



Dinstati par minuta, pa dodati sve začine, krompir i šargarepu (oceđene), pola čaše vode, i kad provri smanjiti na najtiše i pustiti poklopljeno da se krčka desetak minuta.

Cook it briefly, then add all the spices, potatoes and carrots (strained), half a glass of water, and once it boils, cover, reduce the heat to lowest and let it simmer for ten minutes.



Potom dodati seckano lišće sremuša i kuvati još deset minuta. Na kraju razmutiti kašičicu brašna u malo hladne vode i dodati varivu. Promešati i kuvati još pet minuta.

Add the chopped wild garlic leaves and simmer for ten more minutes. Finally, dissolve a teaspoon of plain white flour in a couple of tablespoons of cold water, stir well and add to the stew. Mix and cook for five more minutes.


Servirati uz prepečen hleb, suve crne masline i sezonsku salatu.

Serve with toasted bread, dried black olives and seasonal salad.
