Zelena projara * Green Corn bread


Sjajan dodatak obroku ili užina, naročito uz svež kefir ili jogurt.

An excellent addition to a meal or a snack which goes well with kefir or plain yogurt.


Sastojci: 
Ingredients:
3 jaja
300 ml kefira ili jogurta
140 gr kozjeg sira
100 gr bebi-spanaća
3 čena belog luka
Prašak za pecivo
½ kašičice soli
Malo crnog bibera
1 šolja običnog brašna
½ šolje kukuruznog griza
1/3 šolje ulja
Susam za posipanje

3 eggs
300 ml kefir or plain yogurt
140 g goat cheese
100 g baby spinach
3 garlic cloves
10 g baking powder
½ teaspoon salt
A bit of ground black pepper
1 cup plain flour
½ cup polenta flour
1/3 cup oil
Sesame to top


Umutiti 3 jaja pa dodati šolju brašna sa praškom za pecivo i solju. Izmešati, dodati kefir i mleveni biber pa dobro umutiti.

Mix 3 eggs and add a cup of flour with baking powder and salt. Mix, add kefir and ground pepper and continue mixing.


Sipati ½ šolje palente i 1/3 šolje ulja, izmiksati, pa dodati izgnječeni beli luk, izdrobljeni sir i ugrubo seckani svež mladi spanać (ako koristimo stari spanać, treba ga prethodno blanširati).

Pour ½ cup polenta flour (corn semolina) and 1/3 cup oil, mix and add crushed garlic, crumbled cheese and roughly chopped baby spinach (if you are using plain spinach, you need to boil it briefly first).


Zagrejati rernu na 180 stepeni. Podmazati pleh i sipati smesu, pa posuti susamom. Peći 35-40 minuta, dok lepo ne porumeni i ivice počnu da se odvajaju od pleha.

Heat the oven to 180 degrees C. Grase the tin and pour the batter and sprinkle with sesame seeds. Bake for 35-40 minutes, until it becomes nicely golden and the edges start separating from the tin.

Nabujak od spanaća i feta sira * Spinach and Feta Souffle


Ovo je preukusno, lagano a sito jelo koje se brzo sprema.

This is a super tasty, light yet filling meal, and fast to prepare.


Sastojci:
Ingredients:

1/2 kg očišćenog spanaća
oko 100 g feta sira
2 jaja
200 ml kefira ili jogurta
4 kašike griza od pšenice ili spelte
3 struka mladog belog luka
malo soli i ulja
1/2 kašičice praška za pecivo
malo susama za posipanje

1/2 kg spinach leaves
approximately 100 gr feta cheese
2 eggs
200 ml kefir or plain yogurt
4 tablespoons wheat or spelt semolina
3 spring garlic sprouts
a bit of salt and oil
1/2 teaspoon baking powder
some sesame seeds for the topping


Spanać blanširati (na veoma kratko prokuvati i dobro ocediti). Iseckati na krupno. Iseckati beli luk i izgnječiti sir.

Blanch the spinach (briefly boil in water and drain well). Chop coarsely. Chop the garlic sprouts and mash the cheese with the fork.


Umutiti penasto mikserom jaja, dodati prašak za pecivo, griz i polovinu kefira. Dodati spanać. Izmešati viljuškom pa dodati preostali kefir. Dodati soli i sira.

Mix the eggs well with a mixer, add the baking powder, semolina and half of the kefir. Add the spinach. Mix with a fork, then add the remaining kefir. Add salt and cheese.


Sve dobro izmešati i sipati u posude za pečenje.

Mix well and pour into baking dishes.


Peći oko 40 minuta na 180 stepeni, poslednjih 5 minuta pojačati na 200. 

Bake for approximately 40 minutes at 180 degrees C; increase to 200 degrees for the last five minutes.


Odlično ide uz mlade krompiriće.

It's excellent with baby potatoes.

Spanać s prepeličjim jajima * Spinach with Quail Eggs


Evo ideje za brz i zdrav ručak.
Here's an idea for a quick and healthy lunch.

Sastojci:
Ingredients:

400 gr svežeg, očišćenog i opranog spanaća
Pola šolje (120 ml) kefira
5 prepeličjih jaja
kašika ulja
prstohvat soli

400 gr fresh, washed spinach
1/2 cup (120 ml) kefir
5 quail eggs
a spoonful of oil
a pinch of salt




















Staviti dublji tiganj ili šerpu na zagrejanu ringlu, dodati malo ulja i ubaciti opran i oceđen spanać. Odmah poklopiti i smanjiti vatru. Nakon par minuta promešati. Spanać će uvenuti i pustiti vodu, i kada se to desi, otklopiti i pustiti da se lagano krčka da bi voda mogla da isparava. Dodati kefir i promešati, ostaviti da lagano vri i povremeno mešati. Dodati soli. Kada je skoro sva tečnost uvrila, varjačom grupisati spanać u krug i poravnati ga, odozgo razbiti 5 prepeličjih jaja i poklopiti na kratko da bi se jaja jednako ispekla. Treba da se uhvati bela korica, ali da žumance ostane meko.
Servirati uz tostirani hleb.

Place a skillet on a well heated stove plate, add the oil and the washed and drained spinach. Put the lid on and reduce heat immediately. Stir after a couple of minutes. The spinach will wilt and liquid will drain, when you see that happening remove the lid and let it simmer, to allow it to evaporate. Stir occasionally. Add the kefir and keep cooking. Add salt. Once the liquid has almost completely evaporated (don't let it dehydrate completely), use a wooden spatula to shape the spinach into a nice, flat circle. Add the 5 quail eggs on the top and cover just for a short while so that they would cook evenly. You should see a thin white crust forming on the surface, however, don't overcook, make sure that the yolk remains soft (and runny, if you prefer it that way).
Serve with toasted bread.
